Based in Tuscany, Italy, the Paoletti family were producers of fine Chianti during the 19th Century. With reverence for the past while at the same time wanting to make the best use of the materials at hand, Fabrizio Paoletti began tapping his supply of the 130-170 year old Chestnut wood, formerly used to craft wine barrels for the old family business.
